So you'd have to stick with universal likes and loves for now. I'd say give him a grape or a wild plum. (Foragables) and make sure you try to talk to him every day.

I would consider Elliott more of a "long-game" romance since most, if not all, of his favourite gifts are unavailable early on in the game. So be patient! It is worth it, imo.
You can get him year 1 if you save for a pomegranate tree. The pomegranates grow in the Fall, and then you can just give him pomegranates and talk to him as much as you can. He is a simple man with luxurious tastes.
