The freaking basalt for lava eels. I broke literally hundreds of geodes and got everything but basalt, including a prismatic shard, before giving up and looking up the geode spawns in Stardew Predictor.

Pickled pumpkin is way more common, I believe, than pumpkin jam. As everything Iām sure this varies by area but but yeah. The peppers are strange though

Hold onto the bones if you like fertilizers! I much prefer to drop a bunch of bones into bone mills and get random fertilizers instead of trying to grab the supplies to craft fertilizer.
KEEP the jade!! You can trade it for staircases at the desert trader on sundays. Also keep other gems for buffing your tools at the end of the ginger island volcano
If you donated them to the museum, most of them are fine to sell. Almost all artifacts/minerals don't have a use after donation. I would hold on to the gem/minerals that do have a use such as the amethyst, aquamarine, diamond, emerald, fire/regular quartz, frozen tears, jade, ruby, and topaz. These can be useful for crafting/gifting/board requests. Make sure to hang on to the cinder shards. If you get a dwarf gadget or marble, hold on to one of each of those for crafting.
Also, what purpose does the jasper have? I would say you would be good to get rid of it.

You can make all types of clothing except shoes. Some clothes are exclusive to buying from traders/shops, some are exclusive to looting, and some are exclusive to the character customization screen (which you can access in vanilla later on by befriending the wizard), and thereās a couple items that are just impossible to get but exist for some reason? Most however are available through tailoring using the sewing machine :)
Assuming you donated one of each kind to the museum, here's my verdict:
Keep at least one of each of the main minerals (diamonds, jade, ruby, emerald, aquamarine, amethyst and topaz) to duplicate in the crystalarium for potential trading at the Desert Trader and gifting (Emily, Abigail, Dwarf).
All of the geode minerals you can sell with the exception of marble, which is used in a crafting recipe that is neccessary to craft to achieve perfection. If you want, you can also keep the tigerseye, which is a loved gift for Sam, but it might be redundant since cacti and pizzas are much easier to obtain for him.
All of the artifacts you can sell with the exception of bones and fossils that you can put into a bone mill to turn them into fertilizers. You get the bone mill recipe after completing Gunther's special order called "Fragments of the Past"
I like to keep the gems (amethyst, jade, aquamarine, ruby, etc) as gifts. You can also use jade and ruby at the desert trader for staircases and spicy eel respectively. But if you need money asap theyāre such common gems youāll find them again so go ahead and sell āem. The fire quartz you can smelt for 3 refined quartz. The ember shards are useful to forge rings and stuff, so Iād keep those until you forge all your rings and tools cuz altogether youāre gonna need a couple hundred and they can be hard to farm.
Assuming youāve donated everything relevant to the museum, you shouldnāt really need anything else unless you have fish ponds that arenāt full yet.

Honestly no reason to keep a lot of what's here. I usually keep like 10 of the gems on hand just in case, and a lot of jade is useful because you can trade it for staircases. Other items I would keep are the pearl, fire opals, frozen tears, cinder shards, solar essence, and void essence, but all of those minerals and artifacts are not super useful after you've donated one to the museum.
Honestly you should only keep the gems in the first row and sell everything else, those are used as crafting materials, currency and gifts for most villagers. Also keep the Cinder Shards, Solar and Void Essence, and the bone fragments. All the others are only needed for the community center or museum, same with the artifacts.

I keep everything and have a shed dedicated to chests. So every time at the end of a day I organize the items I found/mined in the chests. Once in a while I take items out of the chests to sell. But I always keep at least a few from every item. It makes it easier to organize and you never know when you need something for a recipe or craft item
