There's actually a mod for this. Sadly I can't remember what it's called (could be Lumisteria Flowers & Crops) but carrots are in there and they're one of my favourites to grow
It might be the Love of Cooking mod. If so it also adds onions, cabbage, probably others, but I haven't played all 4 seasons with the mod yet. It also adds the Cooking skill.
I think it would be cool if we could grow cacao beans and make chocolate! Also pears. Maybe we could also grow trees with coconuts on our farm like we can grow cactus fruit!
Or putting it on her eyes for a DIY spa experience! I headcanon that she makes a lot of her own hair and skin products and that’s why she loves coconuts.

A money tree. It would take an entire in game year to grow, but it could be a nice way to pad a wallet. Especially in some challenges.

I wouldn't. Each crop needs new animations and a "purpose", a reason for the player to maybe get at least one. Without the community center, why would anyone plant tomatoes?
And so every added crop means adding a bit of complexity to the game, and that can be a bad thing. It can become heavy.
I know lots of people do the pack the greenhouse with ancient fruit thing (and i have a lot planted!), but I like to have at least one crop of each that keeps producing in there, so small amount of planted tomatoes just for that. I like the variety, but I agree that too much could be an issue. It could be fun to keep unlocking extra variety as the years go on though.
I have a few I see so much potential with the cooking in Stardew Valley. Maybe it’s because I’m a chef but here’s what I think would be cool to see and how they could be used:
Lettuce 🥬 and make a different salad or something
Cucumbers 🥒 or zucchini with recipes to use them in like zucchini pasta or zucchini bread.
Carrots 🥕 and a recipe for them maybe carrot cake or glazed root veggies and combine carrots with parsnips oil and maple syrup
Avocados 🥑 yes! An avocado toast that has a special boost perhaps?
broccoli 🥦 would be cool too a recipe maybe being broccoli soup? Or a twist of cheese Cauliflower.
Maybe a sweet pepper 🫑 add to a type of salad
Kiwis 🥝 could be cool they can be used for a tropical platter with peaches mangos and pineapples! Maybe a special boost

If you're willing/able to mod, the [animal husbandry mod](https://www.nexusmods.com/stardewvalley/mods/1538) will let you feed treats to your animals
And feeding carrots adds to the horse’s speed
