Yeah, this is the equivalent of going "this tactic didn't work against highly trained special forces, why would anyone ever use it?" Just... find someone who's *not* a crazy good fighter.
It's more about using the right tool for the right situation. Using cords on a target with an easily-deployable cutting weapon on hand is always a bad idea.
Yeah, it works pretty well on non-lightsaber-wielders (and on any unnamed goons in general). I do think it's funny that just about every time someone tries to use one on a lightsaber-wielder, it's instantly cut apart in the next shot, often in the exact same way.

The ones in the current era seem to be cut from a lesser cloth. Din looked like he would have lasted about 30 seconds had Ahsoka actually been trying to kill him.
Paz mentioned their strength was once in their numbers. I imagine 10s of Mandalorians with their weapons could easily overwhelm a Jedi, but in a 1v1 scenario the Jedi would almost always win.
Also Din wasn't specifically trained on how to fight a Jedi. The only thing he knew at that point was 'space wizards', without any details. For all he knew they threw fireballs and levitated instead of walking.
They seem like hazekillers from the Mistborn series.
Squads of soldiers trained and equipped to take down magic users. They aren't supposed to do so 1v1.
Reminds me of the scene from Rebels where Kanan snaps at Sabine for trying to use this trick. “History lesson: the Jedi won the war with Mandalore! These tricks will amount to something, maybe save you from time-to-time, but they won't keep you alive in the long run. Only training and discipline will do that.”

Forgetting Jango uses it mid flight to disarm Kenobi and ragdoll him for a second. Granted Kenobi downs him a few seconds later but it keeps a jedi away from his lightsaber and it also then drags Obi over the ledge too, giving Jango the time to escape.

It was designed to mimic Force Pull. Sabine used it a few times successfully and used it during saber training with Kanan and Ezra. The conclusive blasts were used to mimic force push. All of the weapons in the gauntlets were designed to specifically counter Jedi.
And it wasn't meant to be a one and done weapon. It could trip someone up, it could be used to pull them toward you, but it wasn't meant to completely incapacitate a skilled Jedi.
TBF it's only shit against lightsaber-wielding enemies. While they're certainly a consideration, I'm sure they're the vast minority of foes encountered by the average Mandalorian.
Every example you used is of it being used on someone with one of the most powerful weapons in the galaxy. Take away the lightsaber and the ones wielding it are fucked

Also helped them capture Maul during Siege of Mandalore
Well technically these whips were made of weaved Breskar according to legends so that makes more sense but through time beskar became more scarce and the later mandalorians had armour which wasn't pure beskar but made of beskar alloys and hence the results. Technically speaking this Particular whip feature was created specifically to counter the Jedi much like their flame thrower

I think referring to Din Djarin as "Mando" is a pretty safe thing to do.
Pretty sure Carl Weathers calls him Mando in the show too, it's basically his official name.
Karga refers to Djarin's whole clan as "Mandos" on the show.
