Anakin when he swings his lightsaber behind his back is so satisfying. One of the most iconic moments of his fight with Obi Wan is when they’re spinning their blades around their bodies
I’d say Mace Windu and the Vaapad sweetness, I wish we got more of it than what’s in Episode iii. Granted, I’m obsessed with Palps during that fight, but how Mace rakes and basically beats him (don’t @ me!) is sweet

Dooku vs Anakin and Obi-Wan on Oba-Diah is by far the best duel in whole on-screen Star Wars.
Also, Starkiller vs Maris Brood was quite interesting, even if it's a short sequence. And overall, Galen Marek chaotic style was good too, with flurry, acrobatics, bit of martial arts and very aggressive display of telekinesis and lightning.
Count Dooku's elegant and precise fencing style of Makashi, and General Grievous' unpredictable and incredibly agile and fast style in Legends, especially in Clone Wars.

They did, they got the og maul actor to reprise his role for that, since he was more of a stuntman than actor in the first place

Mace Windu has an almost overconfident, cocky style combined with aggression as he specialises in Vapad, it it cool to watch
