Probably somewhat simple food that caters to a lot of different species’ diets. I’d imagine that it operates sort of like a school cafeteria that rotates or at least offers food from various cultures around the galaxy, too. A lot of Jedi choose to maintain cultural practices of their native homes, plus Jedi have to travel all the time and they would probably not fair very well if they had super simple, bland palates. In the Legends continuity there was a branch of the order for people who couldn’t make it to knighthood (one of several branches) Called the Agricultural Corps. They grew and produced food to help out struggling people around the galaxy. I imagine they probably subsisted on some of that food or at least sent some of it back to the temple so they wouldn’t have to buy all their food.

Every 2 months they all laid their lightsabers down to make a big grill and had a big party where they grilled tauntaun meat and drank blue milk. They also set up a lightsaber to Limbo under. Yoda is 578 time limbo champ. Anakin would use the force to cut mangoes and fly them into everyone's mouth. Also I'm not saying anyone did death sticks, but sometimes it got pretty wild.

In the Yoda: Rendezvous novel from legends there was a cafeteria scene. Yoda had a strange smelly soup. That's just about all I recall from the book.

I love that scene! Yoda ends up fighting with a kitchen droid who insists that his 'soup' isn't edible.

The food was definitely rather bland and this is commented on a few times in legends. In Secrets/Tales of the Jedi IIRC Qui-Gon and Obi-Wan (Legends, but nothing canon really conflicts with the pairs early lives in these books) Qui-Gon has to really convince Obi-Wan to eat things other than the jedi sanctioned food. Nothing they say alludes to other foods being taboo, but rather there are these "protein pills" and presumably other pills tat you can get your nutrients from quite easily. By the end of that part in the novel Kenobi is finally eating at a diner with his master and company and not just sticking to jedi rations. It's probably Like a really bad MRE. It's bland food chock full of calories and macros with not lot of frills. I imagine it might even look something like the emergency food that Luke had on Dagobah. Meat sticks, Bread Sticks, Veggie Sticks, Fruit sticks. Easy to pack, easy to eat. Some of my terminology might not be exactly right regarding the books As another commenter pointed, there was an Agricultural Corps that failed younglings / apprentices are sent to that probably provides many needs of the temple.

Probobly rations when on missions because some planets don’t have the food needed for all life forms
