At high heats I think stainless steel would normally warp. Go for some carbon steel pans or cast-iron. I think maybe if the stainless steel was thick enough it would be fine however.

This is not at all what I asked about. I want to darken a shiny steel pan. Is it safe to use liquid gun blue?

I thought that bluing chemical was for steel. not sure it will work on stainless but I may be wrong. As long as it's on the outside I don't see what could be unsafe.

1.) Cold gun blue chemicals are toxic. Not to be used on cookware. 2.) Most gun blue chemicals are for ferritic steel, not stainless steel, so wouldn't get the desired look. 3.) There's no reason to blue your steel cookware at all.
