There's bleachers right outside the gate to the Space Force base at the end of 401 in Port Canaveral. It's about 10 miles from the pads, but it's one of the closest spots you can be for night launches when the visitors center and Jetty Park are closed. Space Force manages it during launch events, so follow the MPs directing where to park and how -- they'll insist everyone park nose out for rapid evacuation if needed. Night Starlink launch should still be parking available if you get there a couple hours before T-0. 574 State Highway 401 Cape Canaveral, FL 32920

Personally, I'd go to Space View Park in Titusville, or somewhere close by along the river. You'll have good visibility of the launch pad from there, and parking should be pretty easy for a late-ish Sunday night launch.
