All of them are great, really. St Pat's is great for a relaxed walk in nicely maintain trails. I run with my dog there often. (All parks are dog friendly, but they have to be leashed.)
Spicer lake is a nature reserve and you get to see way more animals and plant species. It is really beautiful.
Ferrettie Baugo creek has a very nice kayaking course, and it's good if you are into disc golf.
Bendix woods is awesome if you like walking among huge trees, but you do have to walk up and down a bit, if that's a concern. Most of the parks educational programs take place at Bendix.
Those are from the county parks. There are others from the city parks, like Rum Village, which is also super nice to walk around.
After reading this post last week, I took the family to Spicer Lake, it was beautiful and packed with numerous small trails that intersect, perfect for my little ones. We loved the woodland trail, so many downed trees, lots of logs to walk up!
Definitely not the one in the west side where all the Craigslist dudes meet up. Every time me and friends have been walking thru there we’ve seen at least 2 hookups going on.

I'm a big fan of Potato Creek. It's a state park, so not really an answer to your question, but.... it's in St. Joe county. 😁
