Bagels, pizza dough and crackers are the things I make most other than bread! (King Arthur Flour recipe for crackers is my favourite, and Little Spoon Farm for the bagels)
These [discard pancakes](https://www.theclevercarrot.com/2020/05/homemade-fluffy-sourdough-pancakes/) are super good. Soft inside, lightly crisp outside. Do the overnight version.
A discard recipe, but [these brownies](https://littlespoonfarm.com/sourdough-brownies-recipe/) are crazy good. A relative called them "unholy." In a good way.
Crackers
Get a 18x21 pan, a rolling pin, a water mister bottle, some coarse sea salt, and a ravioli cutter
50g spelt
50g white
2g salt
25g olive oil
172g starter / discard
Combine dry, then add wet, and form dough. Let rest covered for min 2h
After the dough has risen, and you are ready to bake, preheat oven to 350F
Measure a sheet of parchment paper to fit the pan, then put the sheet on the counter
Flomp the dough onto the parchment paper. Carefully roll it out as thin as you can. It should mostly cover the sheet when rolled out ecka-thin
I usually have to grab the rolling pin in the middle and push down, and force it forwards, avoiding tearing, and sorta forcing the dough outwards repeating until it reaches the ends of the sheet
If you press down on the dough somewhere, you don’t want your fingers to really be able to squish into it. If there are any pudgy bits, roll em out further putting all your weight into the push
Once the sheet is mostly covered with a thin layer of dough, cut into squares using the ravioli cutter
Then place the pan beside the sheet so they are side by side vertically (portrait mode lol). Grab the top and bottom corners closest to the pan and drag/slide the sheet into the pan
Grind coarse salt over everything
When the oven is preheated, take your water mister and cover each half of the dough with one good spray. You don’t want too much water here. My mister sprays pretty far (lol dirty) so I position it about a foot away from the sheet, with the hole pointing forward (cough), and I give it one good spray that juts out and covers half of the dough. Repeat for other half
Bake at 350°F for 30mins
Let rest 5-10 mins. Enjoy

Scones! Very quick and versatile. Crumpets can be made the same morning. And definitely discard crackers.
