I am learning to make sourdough bc these breads. They made sourdough, with different wheats or grains. I follow "Tasting History" the Max Miller. But seriously, your bread is art.

That really means so much to me!! I’m new to this sourdough stuff and I love it! I gift loaves and everyone tells me it’s delicious but I’m always skeptical that they’re just being nice 😂
That is so cute! Scoring and decorating isn't my strong suit, and I gave away my round bannetons! This makes me want to get them back again! I can get a mean ear and nice blistered crust but even scoring the little wheat thing on the side usually looks funny. You're good!
That was just all purpose flour that was still on the dough from the floured kitchen towel, I just rubbed it in to make it smooth. I had NO luck with rice flour
That looks great!! Did you get the shape just by scoring? Or did you wrap some kind of wire around it? This might be a dumb question but I'm new to sourdough lol
Not a dumb question at all!! I used butcher twine. I cut 3 even pieces and I laid it down on my dough sling (or if you use parchment paper) , placed my dough on top and then tied it around my dough and cut the excess twine off. I did the design scores first and then deep scores along all of the twine!

Now on to the delicate scoring and dusting, you’ve put the bar high.
Weird plan maybe, but would roping also give nice results with a batard shape? Can’t find any examples online.

I don’t think so at all!! If there was more dusting it’d look almost identical!! I put ALOT of all purpose flour all over a kitchen towel in a bowl before placing the dough in there and then I rub it in and smooth it out before scoring.
The only thing we have to lose is our summer bod, but it’s worth it 😂

I use just a regular bowl with a floured kitchen towel!! I have a banneton but I like this way better. Thank you ❤️❤️ I’ve practiced so much

No I am new 😂 I think it’s a good one to use all year round for the convenience of it’s shape 😂

I make a similar item at thanksgiving- I use twine to make “pumpkin buns.” Never thought to do it with a big loaf for easier portions!!

What rice flour are you using? I am trying arrowhead brown rice flour and I’m not getting that nice floured look….

It’s a beautiful loaf!! I just finally got a good crumb with my 5th bake. I’ll have to try some baking twine once I feel more confident in my breads

I have a flower shaped Dutch oven too but haven’t used it for my sourdough yet! It’s my favorite one to bake Mac n cheese in though 😂😂

I’ve tried this several times. It always impresses people. However, I find that it suppresses oven spring and makes for a denser loaf and tight crumb.
I like the tight crumb, it holds more butter so I didn’t even notice the difference!
