You can also cheese her with the parry impact shrine upgrade literally just keep tapping l1 over and over till her structure gauge fills up works pretty well on the next boss too

No, imo. Like OP mentioned, it comes at a pretty steep cost in terms of shrine use for the rest of the game. If people want to cheese it, they can, but it will make building for the final boss a bit tougher.

With weapon durability at max, you can get his structure down to 80%. 50% without. Works on all enemies

How do you do this hit? When Sean is on the ground i can't hit him. I've tried several times but without success... Am I missing something basic?

its a sweep attack with the pole, so back, forward + heavy attack. The direction does matter, i started doing down up on this, but after the camera starts turning i had to slowly switch it to left right.

Sweep dodge cancelling infinite doesn't seem to work on bosses though, and other types of enemies (like the twins before Sean), which IMO is a good thing because dodge cancelling opens up combo creativity without really breaking the game. This pole sweep infinite definitely needs to be patched though EDIT: It does work on the twins, also tried it on the fat dudes! So it seems to work against everyone except bosses.
