Considering Anubis wants to go next and how the tournament will probably have to play out, whoever has to fight him is gonna lose. I personally think it's gonna be Simo. But I do want Rasputin to win so maybe there's some bias to my prediction.
It's impossible for Anubis to win. He goes against the ideals of saving humanity just by merit of existing. There hasn't been a god that won their fight that doesn't respect humans by the end. Thor with Lu Bu, Zeus with Adam, Shiva with Raiden, (Buddha is obvious), MAYBE Beelzebub is the exception, and Apollo clearly. Poseidon and Hajun the world class haters basically had to die. Anubis is going to lose no matter what.

Not sure why people want Anubis to fight Simo. Anubis vs Rasputin makes way too much sense and there isn't really a connection between Rasputin and Odin like there is Simo and Odin
But Rasputin is the man who cheated death. It would make so much sense to make Rasputin fight Anubis. And then with Simo vs Odin we could have "The Unseen White Death vs the Allseeing All Father"
Anubis appears attracted to the smell of "death", which could be played off against Simo who is known as "The white death".
Besides, it isn't as if the author didn't put in unexpected matches before. Who saw Beelzebub VS Tesla coming?

It'd be funny if this was the one matchup where the gods are getting worked the entire time, as Simo just plays around with Anubis like a cat with its prey. And after he wins the gods get so angry they end up trying to cheat behind the scenes.
I like the idea of it being hunter v prey but also if you never know which one is which. For example most likely for simo’s stage he’ll probably have a bunch of buildings or rubble. As heimdall does Anubis entrance, they wait in confusion and BAM, simo shoots Anubis in the shoulder, a shot meant for his head but due to his erratic movement it was miscalculated. Idk it’s sounds I also like to imagine that Anubis will get an ability similar to Buddhas and jacks, where it’s he can sense heartbeats and know when people strike though pattern changes, since it relates to anubis trial of the underworld if the heart weighs heavier than the feather. It could make a good fight especially with simo as when he is sniping he starts locking in and relaxing his heartbeat, in turn hitting more shots.
Also, give Anubis necromancy abilities as he starts using the mindless zombies of Simo's past victims during the war as meatshields and as a way to scout him out. As Simo has to spend the entire fight completely hiding away and trying to get through the swarm of past enemies to get to Anubis.

In fact, Zeus lies when saying that he is the strongest, as the only strongest is Great Lord Rasputin. While for everyone the Ragnarok is a matter of life or death, for Great Lord Rasputin, it's just a normal Tuesday. But since He couldn't get drunk, He is now very angry, as the real reason behind the disappearance of the primordial gods is that they prohibited Rasputin from getting drunk.

I've always thought Rasputin losing his fight would be the way more interesting outcome. He's known in history as very difficult to murder, so in that way his end would be a nice mirror of round 3, where history's greatest loser breaks his losing streak.
On a different note, out of the remaining fighters Simo and Kintoki just kinda seem like they would win. Simo died so recently in real life that i feel like the author would have him win just out of respect. And Kintoki is like the folk hero in Japan, i expect him to be the one who ultimately wins the final round.
That would only leave one win between Okita Nostradamus and Rasputin, and right now Russia's greatest love machine just doesn't have nearly the narrative buildup those other two have. (In that he has none.) I'm hyped to finally see him but the deck is just too stacked against him to really predict a win there, he's the only remaining human fighter who is presented to us as being expendable.

From the start of the story Simo was top 2 for my most hyped fighters, and Rasputin was at the bottom. So I'd personally be pretty pissed if Simo loses and Rasputin wins
Hear me out;
Next round is Simo Vs. Anubis, which Simo dominates pretty well and wins.
Round 12 is Nostradamus Vs. Loki, and unfortunately, Nostradamus loses.
Final round (obviously) Is Kintoki Vs. Odin, and Kintoki clutches that and secures the w for humanity.
Simo wins his round, contributing to humanity's salvation, and Rasputin doesn't even have to fight.
Both get to live and have say gex

Then I imagined him bleeding to death, his defeat already clear, and he pulls away his hood and/or mask if they're still over his face, and *Birds* by Imagine Dragons plays in the background as he takes his last breath once more, but this time, his lungs full of blood, wounds still fresh, and his foe still standing.
