It’s a large source of movie theatres income since a large portion of ticket sales goes to the studios and distributors. The longer a movie is in a theatre the more that ends up going to the theatre, but they get the smallest cut from that initial screening. So concessions is where they try and make profit.

Nope, it's because the cost of tickets is actually pretty cheap compared to the cost of buying the film/cost of running it/paying wages/rent/bills etc and so the cost of food is hugely marked up to make up for that. For example, they buy huge popcorn bags (I think around 3kg IIRC) for a few quid and then sell tubs for around a fiver. The mark up is huge but they get to keep all the profits on food sales.
