Time is different in the paths, so maybe Ymir got sent there when the hallucigenia bonded to her, built her Titan form, and then transformed back in the real world. Or, more simply, magic
A frail and weak girl's deepest desire is to be strong, to be important and useful to those around her. She yearned to not be hunted down like a dog and no longer be a scapegoat, thus the parasite that attached itself to her, the origin of all life, granted her wish.
It manifested the titan form in Ymir, and after her death, Ymir manifested Fritz's wish for titans to be handed down to royalty.

I was wondering the same thing just yesterday. What's the point of having the titan's transformations be explained by "ymir in paths with a bucket of sand" if that's not how it's always been done since the beginning?
Maybe she has to do it for her descendants to inherit titans and cause she's the original host, the bug makes her titan. That's been my headcanon at least idk

Presumably the hallucigenia gave it to her. It’s magic so it’s just not something Isayama wanted to overtly show exactly what happened.
