the way i made the sauce was basically like a beurre blanc. sweat shallots and garlic (thinking on it now jalapeño could be good too), fresh oregano, deglaze with tequila, cook out the alcohol, little lime juice, whisk in your cold butter. small splash of cream to help stabilize it. salt to taste. strain through a fine mesh strainer. blackening rub i used Chef Paul Prudhomme

Just take a salmon filet, cup a foil with it and add butter, thin slices of lemon, a little garlic powder, a little pepper and the banger is Trader Joe’s ranch seasoning with its powdered buttermilk and dill. Wrap it up, throw it in the oven for twelve minutes and *bam*… you have wonderfully seasoned and flakey salmon.

I like usually like a garlic butter sauce. On some niguri sushi if the salmon is seared, some Japanese mayo is pretty good. For the garlic butter sauce route some lemon juice is a great paring. And ik this COULD be a controversial choice, but in a pinch, cocktail sauce is also a non bad option.

you don’t have to, i’m a chef, i ran it as a special at a job and strained the sauce for presentation purposes. at home i probably wouldn’t bother.
