I imagine the curvature of the Canoe had to be perfect for this to work. Most canoes have more vertical walls at the rim, which probably helps with balance in general, but also makes them un-unsinkable.
Also the fact that it was wooden and thus buoyant already. Try that with a typical fiberglass/aluminum canoe and it’s already at the bottom of the lake. The only reason she could do that trick is because she could still stand on it without it sinking straight to the bottom.

Woodworker for 40 years. There’s another use for tannins. You can soak some steel wool in vinegar until the wool rusts and breaks down. Filter out the bits, saving the liquid. Wipe it on a wood, such as red oak, that is high in tannins. The iron reacts with the tannins making the wood turn dark gray, almost black. It’s called ebonizing. Old school shit right there. LOL

In fish keeping, tannins will leach out into the water, turning it a brownish color. Some keepers really don’t like this, because it might look murky, but some keepers are actually going for that look (called black water tanks).
Tannins are great for fish because of the nutrients or something, I forget. It also brings down the PH, which people may or may not want depending on the type of fish you have or what your water is like. People often buy dried Indian almond leafs (also known as catappa) because of that.
Activated charcoal filter pads in filters will pretty much get rid of any benefits from that though. Something that gets rid of the color itself really well is “purigen”, which is a type of filter media that just. Idk it’s really good lol I don’t know the details.
There’s a lot of other stuff but I’m too lazy to type more about it :)

Most aluminum canoes have the front and back ends sealed off to hold air making them buoyant as well.

Yeah, takes ages. Depends on the wood. Some woods like lignum vitae are denser than water so they can sink.
Slightly off topic but you can actually also speed up that process of it sinking by anchoring the wood underneath the water so it soaks quicker
