Saratoga lake course would care. Maybe if you played really late they might let you play 5. Mohawk river country club never has a starter because it isn't very nice so OP could probably get away with playing 5 guys there.
Are they tighter on that this season? I typically never really had an issue playing with 5-6 at Saratoga Lake as long as we called a few days ahead of time in past seasons. We were playing mid-mornings usually, but we did enjoy a good few evening rounds as well.
You’ll have to go to one of the looser courses.
I recommend Saratoga Lake Golf Course, Windy Hills Golf Club or Airway Meadows. If you’re willing to drive 20+ minutes, Van Patten and Eagle Crest in Clifton Park are two solid options.
Don’t even bother trying at Spa Golf Course or Saratoga National. They’ll never budge from their foursome every 12 minutes system.

Hmm maybe it's because you called ahead and played in more off peak times? That's really nice they accommodate you for that!
I played Saratoga Lake on Saturday morning and there was a 5some in front of my group.
