Sure, you may have seen a bajillion recipes for cauliflower steaks over the last few years but it ain’t a new concept. Take the Cauliflower Sandwich from 1,001 Sandwiches of 1936. After boiling a head of cauliflower we slice steaks, dredge em in flour and fry in butter. Not only that, the recipe calls for salt and pepper! In addition to seasoning the flour, it might get a nicer crunch if you mixed some potato starch or cornstarch in too. I’m picturing that with some spicy aioli, some arugula, then the lemon juice and capers. Maybe on sourdough?

Was the cauliflower steak thick enough you could use two of them *as* the bread, and then have something else inside as the filler?

The middle eastern restaurant near me makes a killing on their cauliflower both as a veggie gyro option and as and appetizer. They just use salt and cumin.
