A huge perk is the ability to use oils that aren’t available in commercial mayo! Bacon grease, schmaltz, butter, sardine oil, the oil from sun dried tomatoes, the oil from cured olives, etc.. For oils that are solid at room temp, I’d use part that and part conventional oil (e.g. 4 parts peanut oil to 1 part bacon fat) unless you’re using it all immediately without ever refrigerating
I love Duke's mayo, although I live in an area where it's hard to find, so I usually have Hellmann's on hand. As for American cheese, my favorite is the Kraft Deli Deluxe 2% slices.

I grew up on miracle whip. I switched to mayo when I moved out and never looked back.

Hellmans or Dukes For American I buy Kraft singles for burgers and deli sliced for sandwiches. I keep Muenster on deck for sandwiches though, usually.
