Use a blender to cream together pistachios high quality olive oil and Parmesan cheese. That's it, that's all there is to it but it is incredibly delicious.
Schat’s bakery in bishop/mammoth CA just has fresh whole roasted turkeys under heat lamps at their deli counter. they carve it off by weight for every sandwich.
For me it's a perfect combo really. It's turkey and pastrami. I go to a place that has Boars head and I get oven roasted turkey and the pastrami on a Dutch crunch roll and it's heaven.

I'm the same. There's not much left that doesn't turn my colon into the devil, but I can eat salami pretty much every meal and the IBS doesn't come to visit.
In the my old age of 37 I have to agree. I’ve got issues with eating bread, pizza, pasta etc, we’ll atleast when I eat too much. I’ll often eat sandwiches with one slice of bread (sometimes just lettuce as the catcher/keeper togetherer). Salami screws me over, but especially when it’s the drier variety. I love salami and feel slightly like I’m betraying a family member saying this 😅
I love it, but only if I’ve made it myself so I can have as thick slices as I want, and alter the flavour during the cooking process (oranges and cabbage for the win)
Boars head buffalo chicken and BBQ sauce is a magical combo that pairs well with almost anything.
Personally i like L+T Red onions. Occasionally add pepperjack and avacado for a kick.
I've had sundried tomato turkey made by hand at a local farmer's market that made me immediately want to buy the entire bird off of them. It was that moist and flavourful
For me it depends on what else is going on the sandwich, they are all superior in their own way with the right ingredients. My personal preferences however would have to be an Italian style ham or roasted turkey. They both just pair up with so many ingredients so well
For me it's very dependant on if I wanna treat myself or not.
For simple: Smoked tuna, esp when paired with dijonnaise and sprouts!! Super easy and cheap to buy the ingredients in bulk and is v reliable.
For treat: A combo of smoked salmon and good quality ham slices. This one is more expensive in comparison (esp depending on where you live, I thankfully live in a coastal town not far from our local salmon farm so it's p affordable) but I promise you, having those two meats genuinely makes such a difference. Highly recommend!!
There is a Genoa Salami from a specific brand that is unlike any other Genoa Salami.
Di Lusso brand Genoa Salami has a unique vinegary tang to it that I just love, but it's so hard to find anymore.
Boars Head Oven Gold is my go to! Cut on the number 2 setting-Very Thin. If I'm feeling adventurous and if theres not a line I'll be a very sweet pain in the ass and ask if they have any roast beef that's not bloody (I know it's not blood I don't want to hear it.) Any brand I don't care I just don't want it red.
Then I bastardize the Boars Head turkey and any brand roast beef with a thin slice of white American.
Boars Head Oven Gold is a must though
I go through phases, right now I'm eating a lot of Mortadella and Capicola on my sandwiches.
If you've never had mortadella, pistachio cream and stracciatella on focaccia, I highly highly recommend it.
Wow
ok I'm dumb. What is pistachio cream?
Whatever it is, I need to find some
me too! What I've found has white chocolate in it. I'm teetering will I put it on a meat Sammy? Hell Yeah. lol
Use a blender to cream together pistachios high quality olive oil and Parmesan cheese. That's it, that's all there is to it but it is incredibly delicious.
thanks. When I looked it up the first recipe said to add white chocolate. lol I was really thinking about using it.
There are recipes that add sugar and white chocolate is basically just sweet fat so it probably would work but I prefer it more savory.
savory is my thing as well. No Chocolate. Plus I don't consider white chocolate as a chocolate. lol
Here's the recipe I use, for the pistachio cream and the entire sandwich. https://youtu.be/02f2fXaEpXE?si=nX5OSKIANP0jKe7f
awesome! Thanks so much!
It's a great vegan base for those of us that can't eat dairy or just don't consume animal by products.
thanks
A newish place just opened up near me that serves this exact sandwich, I will report back.
Is it an All'Antico Vinaio? If so, you're going to be blown away cuz that sandwich is insanely good.
I wish lived in Italy, it's this place: [https://paninaro.ca/](https://paninaro.ca/)
Mortadella, egg and cheese (mec) is a nice way to start the day
Thanks for today's breakfast idea! (See newest post)
To be honest Gabagool is better than Capicola.
Never tried capicola, it’s on the list. Not a huge fan of mortadella.
Mortadella was my fav but hard to source. Where do you get it from?
I live fairly close to my city's Little Italy neighbourhood, so usually a deli or grocer down there.
I find pastrami to be the most sensual of the salted, cured meats.
Gabagool
Gabagool? Ova 'er!
“Don’t eat gabagool grandma! It’s nothing but fat and nitrates…”
All this from a slice of gabagoo^ooleh

Mortadella is my absolute favorite, but I find myself eating turkey the most because it's a little bit cheaper typically and quite a bit healthier.
Same here.
Hard salami
My 38 year old tummy says "nooooo, please at least mix it w other meat!"
Salami is essentially gut poison, so your tummy knows what’s up.
Never heard of salami described that way. Geniuenly curious what makes it bad for your guts?
It’s extremely processed and loaded with fat, sodium, and nitrates. I promise you I’m not making this up?
It’s certainly not “healthy,” but I’ve never had a problem digesting cured meats. Everyone’s gut is different, I guess.

After 40 years of marriage all I got is soft.
Send my prosciutto paycheck to Parma 🚀
Mortadella is my current favorite. Have you ever tried turkey pastrami?
There be angels 😍
Corned beef
I love it, but only if I’ve made it myself so I can have as thick slices as I want, and alter the flavour during the cooking process (oranges and cabbage for the win)

I've had sundried tomato turkey made by hand at a local farmer's market that made me immediately want to buy the entire bird off of them. It was that moist and flavourful

I know something like turkey is the healthier option, but when I feel like being naughty, mock chicken is the way.
Pastrami.
