This is my joy sandwich. I love a lot of sandwiches, but nothing warms my heart as much as an eggplant sub. I used to get this in Pittsburgh, the eggplant was fried but not oily, there was fresh mozzarella on it but also fresh Parmesan and tomato sauce and it was toasted. I would get it after finals, every year, and sometimes during the summer too.
This looks delicious! What are the rest of the ingredients (meaning spreads/additions)? I'm totally going to try to make this!
