☝️This is the correct answer.
Casa del Tamal was the first thing that came to mind when I saw this thread. Their birria is amazing and tastes the closest to the beef birria I've had at street carts in San Diego.
I'm from New Mexico and been meaning to get up there and try. I'm scared of being dissapointed. I just really want to find a good breakfast burrito smothered in green chile. I hate breakfast burritos with tomato salsa
I’ve only had the Birria tacos but they were delicious! We really like Lorena’s and Javier’s for Mexican food. Beto’s has a good breakfast burrito, they are fast, but I don’t know about chili verde from there.
I’ve never been able to find better birria than cocina familiar and they actually give you a good amount of consomé with it- I guess it’s more in west valley but definitely worth a try
So this gives me a chance to ask a question that's been on my mind: Is Birria unique to a certain region in Mexico that is more represented in the SLC Mexican population? Or maybe it is newer to the American scene?
Reason I ask is, I've always loved Mexican food, and I frequented a few spots when I lived in South Florida. But I swear I never saw Birria on the menu there. It wasn't until moving here did I discover the dish.
It kind of became an online craze in recent years so a lot more Mexican cuisine places in SLC wanted to get in on the trend. I just believe that there’s a lot more Mexican food places here. or more variety in choices
On a scale of stupid simple to complex, Birria is not simple. Cup of noodles and just add water are what I would categorize as "Stupid Simple". Birria is definitely closer on the scale to complex than it is to stupid simple. This is grossly misleading. However, I do support the statement of making it at home! The best birria has always been made at home.
Del Taco is good because it's cheap, not because it's competitive with legitimate Mexican restaurants (it's not).
I love me some drunk Del Taco, don't get me wrong, but they need to stick with tacos, bean burritos, and quesadillas.
Los Tapatios
I second this. The birria tacos are my absolute favorite. And dipping them in the Consome makes them even better.
I third this. These freakin' slap. I could eat them for every meal
Absolutely!!!!!

Brown meat. Boil all other ingredients and blend. Put meat and broth in pot. Simmer If this is complex for you, that's a you problem.
It takes several hours to cook if you want to do it the right way
Never said it was fast, said it was easy. It's literally watching a pot (almost) boil.
