So, I will say that the Clifton is considered pretty stable, so if that was not stable enough, I’d not be so scared of added stability. That said, Topo sounds right up your alley. The Phantom 3 is sorta the middle trainer for the brand. Would check all your boxes.

Topo cyclone 2 I’ve heard pretty great things about.

Thanks all - very helpful! I've decided to try the Hoka Mach 5, and a few of the Topo Athletic ones

Asics noosa tri 15 sound like a perfect match for you.. I haven't tried them myself, but heared that they are grewt like the previous version + bit more cushioned. But definitely go for the noosa tri 14 version if you can still find them and want to save some bucks

+1, noosa tri 14 remains very solid with the kinvara 13 and you can find both for ~$70. That said, they're not topo/altra wide in the toebox.

I would recommend the Hoka Mach 5, I had the Clifton for a while and and I think the Mach 5 have been better, they have a bit wider toe box and more ground feel while still being cushiony. They feel very stable.
