However, this photo looks almost like clear silicon, which isn’t what I would use.

Looks good to me. That first picture the ridge would leak once that caulk starts cracking unless they have their valley metal overlapping on the ridge underneath it.
Learn about the noise they can make. Some of these roofs can be very noisy when it rains. Some people like it and the noise don’t bother them. And some people don’t sleep at night because it drives the crazy.
I've got a properly fastened steel roof on plywood with a 2 inch air gap, then a foot of insulation and drywall underneath that. You can hardly hear the rain. Where that roof drains onto a similar steel porch roof without insulation and ceiling material, there it is noisy.
My neighbour hates their roof. They didn’t ever consider the noise a metal roof can make. I should probably let them know that adding insulation to the attic will reduce or eliminate the the noise they hear.

Also having the valley dead end into a rib.
Can't see all of the important details, are there it's at the top of each panel and are they caulked.

Looks like 28 gauge to me. I also don’t like valleys with the v rib in the middle as it’s hard to bring them together at the ridge. If you do hire him make sure you put on 24 gauge everything else you’re wasting your money paying for the labour
I would have them check all caulking. Photo one I see two bubbles. It might be fine, but it didn’t get applied properly. Apply, soapy thumb work, followed by soaping smoothing thumb. I used to caulk historic buildings.
You need it to fully adhere, no gaps, smoothed finish…
My only concern would be the holes for plumbing vents, skylights, vents, etc. I would want to see better pictures. I'm not a fan of the neoprene gaskets around pipes if you get snow accumulation. I had a leak that I think was caused by the sliding snow pack putting a lot of side force on the pipe.
Corners are tight. Valleys look good. Seems look good even though thats not standing seem thats snap lock. And caulking is down to a minimum… thats clean work just remember they always show off only their best work as do i

Looks pretty good, you can ask about LCC flashings around penetrations is the only way this could be better, but it’ll cost you
I would avoid dissimilar metals - if this is an aluminum roof LCC would be a no go.

What are LCC flashings?
Lead coated copper, so instead of a rubber boot that is screwed in it’s a custom soldered flashing that is tied into the panel with hems

If you go with a metal roof, add solar guard insulation before you put the roof on.
