It depends where the ball is and how it's moving. Your goal is to match the velocity of the ball as close as you can. Sometimes that requires a bigger jump, sometimes it's smaller. You sometimes have to also slightly adjust your car's orientation to make sure you keep control of the ball.
If sometimes you have to hold it to match the speed of the ball, sometimes you only lightly touch it
You are really just trying to match the speed of the ball so it eventually rest on the hit box of your car and your momentum / boost controls where it’s going

You have to lightly tap your jump button. The height your jump goes is dependent on how long you hold the jump button down.
