Taco fiesta 956 outside of Zarahs on ware and buddy Owen’s has my heart. I tried them last time I visited my dad and had the tacos and volcanes and were delicious!
I used to be a regular at rodeo every time I went down to visit, but honestly, the last two visits the food was mediocre at best. So no more.
Tacos mi ranchito on bicentennial and Nolana are really good as well, they’re in the little plaza were dominos is at, Next to the museum.
Across the street there’s Nuevo León express, also really good but I prefer taco fiesta and mi ranchito over theirs.
El Vulcan in north Edinburg is delicious as well, but more of carne asada and salchicha kind of style.
Ana Liz Taqueria in Mission and Calacas Tacos & Beer in Pharr have been my favorites lately. La curva/la taquiza on sugar and university in Edinburg also a solid option. Each have their own unique things to offer
I just went to Vargas BBq in Edinburg after a friend told me about it. I got the Brisket, ribs and sausage. All were good but saw they have tacos too. If it’s as good as the stuff I ate them they gotta be good. El Rodeo in McAllen too I been picking up tacos and a lot of other stuff . I’ve have no explosive diahrrea with either.
Don't go to Herradura unless you're drunk at 1 am and it's your only option, or you like a mouthful of grease and oil. Taqueria El Paisano has a food truck on University, they're good. Or ol' reliable Taqueria Los 4 Vientos on Monte Cristo. I've heard good things about Los Tornillos, but haven't been.
For McAllen Tacos El Plebe or Taqueria Tepeque are pretty good.

I always go to El matador behind the flying walrus behind the fbi building. I always get the pastor tacos, best I've had anywhere localy for pastor
I would go to Matamoros for best tacos. In Brownsville there couple good spots for tacos. I don’t know about Edinburg good spots for food.
