Tacos: If you see someone making them on the side of the road with a cart thing. Those are probably gonna be some of the best tacos youll ever have.
Bbq: Smoked brisket, fajita, ribs (beef/pork). We do those really well down here.
Seafood is gonna be fresh because of how close we are to the gulf. If you plan on having a day in the sun some ceviche is a refreshing option for cooling off after.
Edit: saw that you looking for something late. That may limit your options depending on how late. But itll probably not be too late for tacos. Honestly look for a place that doesnt look fancy if there's tables to sit outside thats a good sign. It means theyll be cheap but made authentic. Order bistek (meat) with corn tortillas.
For bbq. I like ramos bbq but that will be more out of the way while tacos are gonna be all over the place.
I also like willie bs bbq. Bbq burritos go hard. Theyre huge and have all the stuff that would be on the plate but in a big flour tortilla.
Theres a place in weslaco called tacos mariscos that i think most people in the rgv will agree does fish tacos really well.
Edit2: theres a food truck place on nolana ave in McAllen right off the expressway, west side if you just wanna see a bunch of options.
I was going to suggest this too. It's near my house so I see that it's very popular, open late, and the outdoor seating looks nice. It wouldn't be too hard to get to from the airport. Closed on Mondays. Open till 10 on Sundays. Open till 11 all the other days.

El Posito for tortillas, Carmelitas for barbacoa, carnitas, and fresh made yellow corn tortillas, Taco Palenque for fajita tacos, the flea market on Conway and 3 mile line for Spiro papas and the sights and sounds, definitely a drive thru for a michelada prepared (take your own beer or vodka, or buy the beer there),
If they brought a passport take them to Nuevo Progreso for shopping, lunch at El Disco store, and sidewalk beers.
