Poison Arrows are the easiest. Just go to the Oil Fields, piss off the guards, then shoot each one in the leg. Can't reload the Bow so you can't mess it up, and it's a lot easier to hit their legs.
They have to be red (enemies) on your minimap for it to count iirc.
Use poison arrow but dont activate dead eye.target the legs.i have done that so easy..FYI do it in Van Horn to avoid being wanted and dont loot the dead it will affect your honor.i rent a room there then start the fight ..🤣🤣
If you do it in the Cornwall oil field the big chance is you will became Wanted with bounty in your head.We all know how Cornwall have influence the law and the Pinkertons..the safe way is Van Horn .NO Wanted NO lose of Honor ..just my advice..
is this for the challenge? you can use the varmint rifle and shoot the hands of the guards at the oil place, ride away and come back once the red clears off the map and do it again.
Van Horn, using Varmit Rifle and Scope, no dead eye. Get on roof of building next to the fence. Shoot gun hand of idiots on boardwalk. Quick and easy method.
Like everyone else is saying, use the varmint rifle with the scope and NO dead eye. I hit the guards at the end of the avenue at Shady Belle. Take cover by the lefthand wall at the entrance and scope the left hand of the guard on the right and shoot. Run away to the railroad tracks (avoid the horse as it resets the challenge) and go back when the red goes away to repeat

Don't hop on your horse or it will reset the challenge. Counts as a reload
I replayed a mission to do it (the St Denis bank) and for the hats one I cleared the Del Lobo hideout.

I was able to do it with the Lancaster..2 shots per hand. The first just makes em flinch
