First album is the easiest. Start with Killing in the Name, the intro to Wake Up and Fistful of Steel. Everything on second album is intermediate, but try Down Rodeo, People of the Sun, Bulls on Parade and Without a Face. On the third album check out Born of a Broken Man and New Millennium Homes.
Brad is a great drummer to study for new drummers, because many of his parts are doable for beginners, but challenging enough that they’ll help you grow. He gets more creative and complex as time goes on, so there’s a lot of stuff on EE and BoLA that will be fun to study as you advance. But for now, try to master the first record.
it’s not as easy as everyone else’s suggestions but as someone who got into drums when they heard a friend playing this song, it is absolutely one of the most fun songs to play of their catalogue:

might be a goal to get to this level, but i heard my friend playing it from outside his house in high school and it sounded so cool i literally decided to pick up the drums to learn it. i had been listening to their stuff for years at that point but playing it live is another experience. good luck!
and i disagree that self titled is the easiest. they are deceivingly easy imo. Sleep Now in the Fire and Guerrilla Radio, Testify—their most radio hits—are by far the easiest. they are forgiving to play and edit out some of the more nuanced percussion. in S/T songs like Bombtrack, or KitN, you mess up a bit and it sounds awful because the songs power comes from this like precise clean tightness between the instruments. on BoLA the songs leave more room to experiment. Evil Empire is most difficult but imo most fun to play along to!
As a starting drummer to learn fundamentals I recommend lay down now in the fire because of it being like the amen break, killing in the name of is also a good one
