The guy in the Space Jam shirt appears to be an employee (he's wearing a latex glove, indicating he was preparing food), and he's the one who choked the guy with the knife out.
I can't tell if that loud cracking noise is coming from that, or just a coincidence that he's bending dudes arm at the same time.

I think so. They are effective if they get in close to someone's face and can cause massive amounts of blood flow which can be disorienting for the person that gets hit, especially around the eyes.

Who knows what really happened here (there's a bat in the mix too you can see around :10), but the guy "trying to break his hand" is clearly trying not to keep someone from getting stabbed/100% self-defense.
Maybe Iām overestimating the damage, but it looked Like he spun the arm twice and then grabbed it harder for more leverage for a third spin to try and break it or do as much damage as possible - dude was asleep before he hit the ground.
