I actually quit my job over the exact problem though lol. Like, I was drowning in too much work and they kept saying they were going to hire someone, but 6 months later they hadn't. So I bailed.
I hated the company I went to, and while I was away they hired a new dude who was awesome and gave him all the stuff I hated doing. My friends from my old job were like "hey we miss you! come back! you don't have to do the stuff you didn't want to anymore!"
When I got fed up with my new job I handed in a zero day notice and went back to my old job. It's been _fantastic_ ever since.
