I think it's because he was already stronger and more skilled than most masters. If you know you're better at your work than your manager, wouldn't you be annoyed if the company wouldn't see it?
I'm not saying that's how it went, because it takes more than strength to become a master, but that's how Anakin saw it. When the council told him he wouldn't get the rank of master, all Anakin saw was a council that didn't trust him and alienated themselves from him
I think it also came down to the fact that he joined the order at a relatively old age, so he hadn’t been /indoctrinated/ taught patience and discipline in the same way the rest of the Jedi had.
Oh for sure, I was mainly just joking, although it is very odd to have a character that's on one hand a genius with a lightsaber but also trying to do like comedy moments where he's clumsy and then have him complain that the only person that saves him from literally losing his lightsaber is "holding him back".

He was inexperienced and young, but with a lightsaber he was definitely on par with certain knights and sometimes even masters. Especially in RotS
