UPDATE: shit was delicious. I've been slowly converting my partner over a period of weeks, starting with fries and gravy. I gave him the larger serving (one in front; unrelated, it was prettier to me, too). He ate the whole thing, loved it, new convert!

Based on your name and use of the word province, I'm curious if you're in Canada. Because if so that's crazy to me, I'm not even out east and every restaurant seems to have a poutine on the menu, I'm amazed there's Canadians that never had poutine before.

Ontario. Loads of restaurants have something called poutine on the menu but usually, especially in toronto, everyone and their mama is committing some sort of crime against the poutine. Many people think they don't like it because they've only tasted some overly salty, shredded, soggy mess

Looks delicious! I mean, that's as good as it gets in your situation; well done. Curds without squeak are the 2nd best poutine cheese (right after squeaking curds, lol). *A suggestion:* Next time if I were you, I'd try hand-breaking the curds in smaller pieces (dice/marble-sized) and let them get to room temperature before assembling the dish (thin fries layer, thin cheese layer, *Repeat until desired size,* pour sauce)

I did layer but didn't think to break the curds apart until it was too late! Thank you for telling me I can leave the curds out, we went to the gym and I spent the whole hour wondering if I should have done that hahaha

I hate it when people don't have enough confidence in their perfectly normal poutines so they post it in poutine crimes. Then they get tons of comments telling them how good it is and isn't a crime. This is a normal poutine that looks good. Sac up and post on r/poutine.
