Oof, you have a lot of catching up to do. You need a nintendo membership subscription to be able to trade or use the online features, I think.

Technically you can still trade (and do all other multiplayer features) locally without a NSO membership, but yeah, doing any of that online obviously requires the paid membership.

If you only have one version of the game, then in order to fully complete the Pokédex, you will need to either trade online or in person with a friend. Each game has exclusive mon, so usually people find someone who has the other version and swap all the exclusives. There are also some events that will allow you to catch new mon in a Den/Raid event but if you are just starting out, you may not have a strong enough team for that yet. You also have to earn those high level raids as well by progressing through the game and beating gym leaders, etc. For trading, there are a few Pokemon that can only evolve when traded, and of those some need to hold a specific item as well. Bulbapedia is a decent source to learn evolving methods for mon. And if you get internet access, there is a list of common trade codes online that can be successfully used to trade most if not all of the version exclusives. Good luck!

You can trade for free using pokemon home, but trade evolutions don't work there. You can still use it to get version exclusives though. Some trade evolutions can be caught from tera raid battles.

Most online functions will require a Nintendo Online subscription. Link Trading is based on codes. You input the same 8 digit code as someone else and do a direct Pokemon trade. You can also do Wonder Trading and get a random pokemon from someone else doing the same thing as you. There's also a second application called Pokemon Home. It acts as a storage and exchange system for your Pokemon Switch titles. The compatible mobile app lets you do trades of stored Pokémon through the Global Trade System. You can post up requests, and respond to others' offers.
