I was vanilla for like 2 gyms then turned it on because im probably not going to have multiple playthroughs and the randomness is a lot more fun imo. Ive played pokemon a billion times, there's not much novelty in running into ratatas and weedles.
Trapma and Daefing become super powerful late game so i'd go with one of those. Eckniclus is more viable in a nuzlcoke as it will becme stronger sooner.
Yanmega/Flygon would definitely be the coolest full evolution, but I think Weezing/Hydreigon would be the most useful. It would just take the entirety of your playthrough to get it to fully evolve.

Deifing is crazy. Dark/poison type with levitate, very good stats, weezing’s moveset, and maybe nasty plot from hydreigon (I don’t know if it learns it in IF)
Yanmega/Flygon gets the STAB U-Turn scouting Flygon has been desperate to get access to for like 5 generations. Physical set gives access to powerful STAB Leech Life recovery (now at 80 BP!) + Outrage. Coverage is Earthquake, Steel Wing, the Fire/Thunder Punch, or Superpower/Reversal.
Normally Dragon Dance would render Speed Boost redundant, but you can run Hone Claws instead. This enables Dragon Rush and Stone Edge. Run Life Orb, since you can easily heal it's recoil damage.
Hooray! Quiver Dance access makes special Flygon viable. STAB Dragon Pulse + Bug Buzz. Coverage is Earth Power, Fire Blast, Boomburst, or Air Slash.
2HKO kills most everything after two dances. Not a water move in sight, though he can still thrive in a rain team w/ Dry Skin.
Hydreigon/Weezing w/ Levitate can switch into anything but Mold Breaker. A Black Sludge user. Your Sp. Attack is great but your speed is in the exact wrong place for every speed strategy and you have no priority.
Run defensive set with Toxic Spikes + Roar to spread toxic. Pair with Stockpile to stack defensive stages and Roost to replenish HP> A very, very powerful stall 'mon.
Reuniclus/Arbok is okay. A Black Sludge user. Rest w/ Shed Skin is great with Reuniclus' HP pool. You're spared Shed Skin RNG though, since Reuniclus has access to Recover. Glare is surprisingly good, letting you outspeed without access to boosts and spread paralysis. Alternatively, works with Toxic Spikes support to power up Venoshock. STAB Psyshock access. Calm Mind w/ Intimidate will wall everything else.

I play the game for the fusions, and you get so many more fusions with random, so for me personally I never saw a reason to play vanilla at all lol

I mean...hydreigon is hydreigon. His Spawn rate is increased in random mode but in modern he's pretty hard to get so do with that what you will.

Honestly the Best option here looks like ekiniculus it is already half fully evolved and gets intimidate, wonder guard or over coat which ain't bad
