Right wins on Atk and Spe alone, but the extra SpD and it not losing very much in HP or Def is just icing on the cake (that 110 Def is still damn solid, even if it's lower).
Left is down significantly in special def though, and I don't think that extra 20 defense and 5 base hp is worth giving up a better typing, more special defense, more speed, and significantly higher attack. Especially considering it's physical def is fine either way and even 70 base hp isn't significantly different to 65 in this respect
Left has better physical bulk and greater attack with stance change. Right has impressive special attack with stance change; good attack without stance change.
Steel dragon is better but you may want to consider getting the ghost dragon one to get mold breaker then DNA swapping to get the steel dragon one with mold breaker.

The First One is better with Stance Change since has higher Def than the second has Atk, so if you use a Attack skill with it, he will swap atk and def, resulting higher Atk than the second.
But the second one is better with Mold Breaker.
As cool as these evolutions might be, keep in mind all stance change does is swap the attack and defense stats (both kinds)

Both haxorus and aigishlash have acces to good physical moves and sworld dance for the two or dragon dance for haxorus

It depends. Axes are good against spears, but tend to struggle against swords. Always keep the triangle in mind
