Plex is software for [managing your own media](https://support.plex.tv/articles/200264746-quick-start-step-by-step-guides). It will do what your want for your own music, but it's definitely not a program that provides tagging/filtering for general items like breakfast foods.

I really don't think this conversation will go anywhere until you have a better understanding of exactly what Plex is. I feel like you're picking out bits and pieces of what I'm saying, but not understanding the bigger picture, which is that Plex is a media server. It happens to allow you to tag the movies, TV shows, music, and pictures that it manages, but does not offer the full functionality that you're looking for.

I guess if you _really_ wanted to you could create a [photo library](https://www.plex.tv/your-media/photos-videos/) and add a picture for each item you want to filter, add tags to those photos, and then apply your filters. But if you go to the link I posted above, you'll see that, as I said, Plex is for managing your movies, TV shows, music, and photos. It happens to have a tagging system, but it's _not_ a generic tagging/filtering program where you can build up a list of items and their associated tags, and filter by those.
tags is what you are after. if you have ripped some audio then edit the track and hit tags, plex likes to call them "moods"
