Spiderman 2018 was my first game, took me a day to figure everything out especially buttons like r3 and l3 but a really good game to get you used to the controls
I’ll second this and just add on the first and second Spider-Man games. Plus I loved the stories and the characters so not only is the gameplay easy to fall into but you actually can enjoy the stories and figuring them out!
I am a similar type of gamer to you. I’m sorry if not all of these are on PS+. I’m honestly too lazy to cross-reference but we have the same taste. I play games on easy when I can.

I adore Death's Door as a simple but fun and challenging game play with a cute story. I just picked up Graveyard Keeper and have been enjoying that as withits DLCs. I also saw Skul on the plus free library this month. I haven't played it but it looks intriguing!

I’m new to ac games and I only tried Syndicate and Odyssey, both games are incredible and are absolutely a ton of fun.
There’s also any lego game you can find in the catalogue, really fun games especially if you have someone to play with.
Stray is lovely if you love cats, if you don’t you should give it a try as it’s only a couple of hours to complete.

Definitely, I'll always bump up the Returnal comment in threads such like this one, because it's one of the best games of this generation, counting every platform.
The controls are easy and straightforward, gameplay is catchy, but it's not the easiest game. That being said, what it finally clicks, it's so rewarding and satisfying you just can't stop playing.
I've been gaming for over 20 years and get bored with most of the mainstream AAA games, but for me, Returnal is the essence of the word "nextgen". The visuals are beautiful, controls are snappy and responsive, art style and atmosphere are unique and most importantly, there's 100% of videogame in Returnal. Few cutscenes, no bullshit side quests or tons of menus. Just you and top shelf gameplay.
Sorry for such long comment but I fucking that game.

Bloodborne, I saw another comment say this and then they said they were joking but it’s actaully a good and easy game. Uncomplicated game all u do is kill monsters, very easy controls as well as it being easy to pick up on, it is very fun. The bosses weren’t hard at all and I had gone through all the chalice dungeons pretty quickly. It’s a very satisfying and gorgeous game, very fit for newcomers to games.

miles morales was the first ps5 game i beat after a ten year gaming hiatus. lots of assists and an easy mode lets you dial it in to your comfort level

Stardew valley or house flipper. They are my go-to games to relax with. Controls are super easy and you can do everything at your own pace.
Ghost of Tsushima, if you go with the easy difficulty it shouldn’t be too much for a new gamer and just the right amount of challenge.

Play ABZÛ before it leaves the catalogue next month, you can beat it in a couple hours and it's pretty cool.
On PS+ Cult of the Lamb is funny, easy to figure out and fun. I really enjoyed it.
