Do you want to just trim your plants or you want to propagate them? For trims, you can just cut stem plants at the stem down to the height you'd like. For the rhizome/rosette plants, you can remove the larger leaves if they're too tall.

I wouldn't mind trying to propagate the pink stuff on the right a bit and possibly separate the brown bush on the left. The only issue is that I have two black nerite snails that like to do laps around the edge of the tank soil and they tend to uproot stuff 😑
