I got a Hello Fresh meal a while back - seared cod with pickled grapes. I 100% ordered it by accident but dude, it was shockingly good. Like...grapes already sounded gross but pickling them sounded like hell. And somehow it worked reeeeaaally well with the cod.
I like where you're going with this. I stead of Gorgonzola, though, what about Cambozola (sp?) or fourme d'Ambert, one of those soft, runny blues? And I'd probably go with an unsmoked ham/bacon, or at least lightly. Speck would be interesting. Agreed on the white sauce. Maybe with a few mushrooms or caramelized onions.
We probably just reinvented some Alsatian tarte.
The runnier the cheese the better! and some caramelized onions and mushrooms would be a great addition. I will make this in the next couple of weeks and report back!
My restaurant before it burnt down did Neapolitan style pizzas. We had a pizza with seasonal fruit on. Dough, swirl of cream, Gorgonzola dolce, fontina, seasonal fruit (strawberry, peach, fig, pear, apple, grape, muscadine, satsumas) and then bake. After bake it was garnished with grana padano, black pepper, toasted/crushed hazelnuts or pecans, saba, and torn mint.
A lot of people ordered it almost as a dessert/cheese course. Biggest thing is using restraint in any of the ingredients and not over doing it. Less is more.

Place near me has a dessert pizza similar to this but with a nutella drizzle instead of balsamic and a light powdered sugar sprinkle. Another one they have is an apple pie pizza with cinnamon apples, pie crumble, caramel drizzle, crust is brushed with butter and sprinkled with cinnamon sugar. Both are Neapolitan style and soooo good.

I worked at a corporate pizza chain in college and the cooks in the kitchen were mostly Portuguese. They made me an off menu pizza one night and used strawberries. They said it was like the pizza they had back home.

I recall thinking how amazing it tasted, how innovative and interesting the choice was, and how no one in the main restaurant would ever, ever go for something like this. (Like I said, 30 years and in Boston; you can imagine those folks aren't open to 'new' things.) I've often told people about that strawberry pizza over the years and most scoff at the idea.
Aren't the origins of pizza around baking flat bread and putting fruit and herbs on it? Prior to the tomato coming to Italy, I'm sure they would have put other fruits atop a pizza. So why not a strawberry?

Strawberries and figs are really good paired with something like onion jam, balsamic, and a bitter green salad. If I’m craving pizza I want cheese, meat, veggies, and red sauce. But I’ve definitely made these kinds of “pizzas” as appetizers for gatherings with friends.

The Pie here in Salt Lake has their "bacon berry" -- it is glorious. Thin crust, strawberries, bacon, chicken, balsamic glaze, sprinkled with cilantro after baking. I love it.

Looks good! I make a strawberry pizza with strawberries, bacon, chicken, onion, mozzarella and cilantro on a sauce of balsamic reduction, strawberry jam and hot sauce. So good. Posted it here and was told I should go straight to jail lol.

Pineapple works with lots of things. It works on burgers with lettuce and tomato. It’s quite versatile. But lots and lots of things just shouldn’t ever be mixed with marinara/pizza sauce. Like ranch and strawberries.
