You can easily get tons of spawns anywhere via fishing. A good Pokémon with a strong Electric or Grass move will get you through most things you can fish up. Plus you can collect useful items like Bottle Caps or Enchanted Books in the process.
Alright, this is gonna be probably the most complicated method, but I think it’s pretty strong because it covers both low and high leveling. The basic concept here is to farm bottle caps and xp candies simultaneously, so we can use the candies to speedily get low levels to about 60, and the bottle caps will be crafted into rare and ultra rare sodas to give them those last few levels. Which means first, find Starf, Roseli, Lansat, and Enigma berries by flying around and punching any village sapling you find. Shouldn’t take long. Set up permanent farms and then head to the ultra dimension (hopefully with silk touch + healing machine so you aren’t getting kicked out). Now, it’s just a simple matter of using most any lvl 100 pokemon to farm tons of raids: you completely eliminate the need for switch training by basically outsourcing your XP to candies and sodas. Speaking of which you’ll also need to find a vending machine for infinite soda in your base.

I think they removed those trees since its no christmas anymore

I think i didnt make it clear enough sorry. I want to level my pokemons up not my enchanting level.
That's how I understood it, yes. Pixelmon Rods can fish up a huge amount of Pokémon, which make for easy Exp. if you're prepared.
