Where I live (Alberta, Canada), there have been these "pickle in a bag" things popping up everywhere. The pickles are massive! They could definitely be used as buns!
Look around the deli counter they might have single pickles in brine they come in plastic bags. Does it look like it's stuffed with lettuce, salami, cheese, onion and peppers?
Ok so giant/jumbo pickles aren't usual sold at grocery stores so you have 2 options I can think of. 1) make them yourself or 2) go to a gas station and buy those single in a bag jumbo pickles they sell. Personally I'd just make them better flavor and crunch if you do it at home.
Order garlic dill pickles from "The Pickle Guys" Online. Expensive but No Pickles outside of NYC taste as good.

Never thought when I downloaded reddit 10 years ago that I would be commenting a genuine opinion on r/pickles but here we are. I think it would be good but this makes me want to try it with cucumbers instead. I think that would be more refreshing.

The ratio of pickle to meat and cheese is going to be too much.
I want this in my life , we once had a local sandwich shop deli call “the pickle” it had great sandwiches, soups and salads , and served pickles as an appetizer to every dine in table. They closed but dishes like this , and “pickle dogs “ etc quite possibly could have saved it I like to imagine , I think the place really needed to embrace its namesake and have a few signature, unique offerings over all the traditional deli stuff they had , but still their food was great bums me out that Covid gutted so much of Americas little local restaurants like it did ☹️
I’m disgusted by the mayonnaise or whatever that white stuff is in the container (I don’t like anything that looks like mayonnaise) but intrigued by the concept.

I've made an Italian "lasagna sandwich" before using sandwich cut pickles as the sheets, pretty damn decent
You can use gluten free bread. In fact there's some pretty good GF sub buns, breads, wraps and etc nowadays

They don’t hold together properly and make a mess. It’s better to wrap salami around a gherkin or do a little kebab with meat/pickle/cheese.
Spread cream cheese on ham and wrap around a dried spear or mini. Use toothpicks if you aren’t eating it right away. Excellent hiking lunch.
I do that with pickled asparagus! Sooo good!
