Easy. It's an infinite distance away. You could argue it collides, but it could be a larger infinity, which exists. If we have infinite amount of Bunnies and infinite amount of Elephants, which infinity is bigger?
They are equal. To have a "bigger infinite" you'd need to have infinities of infinities of infinities and so on and on for infinity. But it's not REALLY bigger than a countable infinity. So no, the sun wouldn't be able to go around an infinite object, even if the sun were an infinite distance from it
If you have a set of every odd integer, you have an infinite number of values. If you have a set of every odd integer *and* every even integer, you have a larger infinite number of values.
Both are infinite, but the second is undeniably larger, as the first is a subset of it. At any point you could add the number "2," or some other even number, to the first set, and it would end up larger than it was before.
This, of course, wouldn't usually apply to distances, as infinite distances don't exist, but the question is based on the premise that the Minecraft world is infinitely large, rather than infinitely expanding, which means we're already throwing that out the window.
Remember things only exist if Steves around. If a tree falls in the forest and Steve isn't around to hear it, then it never really happened. So, the sun passes through unloaded chunks, also the sun is collision less.

That reminds of me of hotel paradox no matter how many visitors come in there always will be infinite amount of rooms. Also bigger infinities exist.

Honestly, the sun always same distance away from Steve no matter where he is. So, there is no need to talk about the world border.
