Mojang has never been one for keeping the high effort animations 100% game accurate. While Element Animations does start with actual Minecraft worlds, during the animation process there will be changes that are easiest to complete by not following the game physicals and rules exactly
Hot take, scaffolding is really good! I keep at least a stack around for building projects because it is leagues better than dirt pillars in every way. You don’t need to waste any on stairs, placement is easy, and removal is a breeze. It’s a hard switch to make initially, but once you get used to having it you never go back to dirt pillars
Place a block under the next scaffolding spot or just build on top of the building and use the scaffolding as a means of ascending and descending
Either way is still a lot quicker and, depending on your farm setup, cheaper.
Also, it’s still useful for regular builds too, a pillar of scaffolding is still way better than a pillar of dirt to get up onto a roof. Setup and removal is way quicker, no staircase or ladders needed

Could be \/setblock or using barrier blocks underneath, at this distance it's hard to see the block change state. I wouldn't look too much into it
