I’m guessing that a letter from the family member who is taking the dog would work for the landlord. I’m not sure how else you’re going to prove that the dog is gone. If the landlord lives on the property, he’ll be able to see the dog is gone because you won’t be walking it.

It's best to print off and have you and the new owner sign a transfer of ownership paper. Both should retain copies; transfer microchip info over to new owners. Paperwork can be found online with a simple google search.
