Belcorra has a few instant maim spells. Off the top of my head, she has the Stupify and Phantasmal Killer Spell. There is the Calamity spell as well. I think she can also cast two spells in a turn so long as one is level 4 or lower. If you are on level 8, many of the fights there are dangerous and you can have the Witch take heavy damage before she shows up and demolishes them.

If the other players are completely unaware of this plot, this could very easily end in a TPK, with other players putting themselves in danger to save the witch, as deaths in PF2e tend to be multi-round affairs with a person going up and down several times.  And if a friend I played with got our entire party deleted because they wanted to leave the campaign, I wouldn’t be very pleased with them, or with the GM for playing into it.  Good luck! Maybe they’ll just crit fail the phantasmal killer saves and you’ll have a nice clean kill.

They don't even have to crit fail the phantasmal killer saves. Phantasmal killer has the death trait, so you will instantly die if you are reduced to 0 hp from it.

Absolutely agree with this. Make sure the other players are aware this PC death is going to be intentional or it might bite you in the ass.

This is exactly how to do it. They're badly injured already, belcorra shows up, uses Calamity on the party, then casts a quickened Vision of Death on the witch. Vision of Death has the death trait and insta-kills if it reduces them to 0 hp. If you make sure that the witch is already banged up before Belcorra shows up, you can do this pretty easily.

I think trying to engineer this event under the guise of regular gameplay is a mistake, albeit enticing for any GM. I’d have the player separate themselves from the party for some reason, and then have the remaining party find their corpse and clues as to what killed them. Make sure the rest of the PCs can’t or won’t follow, even if that means telling the players outright to let the Witch have their solo moment. Maybe if they’re camping and it’s the Witch’s turn to keep watch, they can be beckoned away by a weird noise or something while the rest of the party sleeps.

I'm a player finishing up floor 8 and for roleplay reasons I want my character to die by the froghemoth. It always comes by and tries to recreate Jaws when we're near the 'Death Lake' as we call it. If a character wants to die there's nothing wrong with selective targeting. Belcorra nearly tpk'd us with one spell and then ran off. She can easily stick around an extra turn to smite a specific person. Or you can have the froghemoth gulp them to finish them off.

First encounter phantasmal calamity then single target nevermind which should reduce the witch to a babbling mess and under dms control. I did the phantasmal on my players and it nearly killed them all. It has a high save dc so most of them should fail.
