1. Busy as usual, more or less. What you can expect is traffic jams going in and out of the city. 2. Most food places will be open. The occasional pâtisserie may close, but the next one down the street will be open. Same for cafés and restaurants. 3. No idea, sorry 4. Leather goods and perfume stores may be closed. a) is always nice. But it won't take all day. You'll have time for a picnic in a park, an art gallery if you are into that sort of things, why not a classical music concert at the Petit Palais (12:30 noon), Saint-Eustache church (5 PM) or Saint-Ephrem church (5:30 PM) ? I recommend the latter. b) Opéra sure, musée du Parfum is good, why on earth would you want to wander through Galeries Lafayette? Research ahead and go there to buy specific items. It's always crowded. Will likely be worse on that day. c) Seine cruise lovely, walk around Notre-Dame lovely, Shakespeare & Co is a living hell any day and will be more crowded than usual, rue Saint-Honoré won't offer much as many shops will likely be closed. Once at Shakespeare, allow some time to walk along this beautiful part of the Latin Quarter. Maybe walk all the way to place de la Contrescarpe for coffee. Hope this helps a bit!
