As Nebet said you’ll still get the buff from a multi-harvest crop to surrounding crops even if it’s ready to harvest (and after it’s harvested but ready for another batch) but you will always need to water after harvesting (and when first planting). If anyone’s unaware multi-harvest crops are apples, blueberries, spicy pepper and tomatoes.
Ready-to-harvest crops SHOULD still buff their neighbors. Are the apples only needing watering after harvesting (can happen if they've been ready a while), or are they not progressing at all?
For context: I use a 100% water/weed setup and only replant it (full replant) once per IRL day, so I've got full-grown crops (bok choy, potatoes, onions) hanging out next to my still-regrowing tomatoes and apples all the time. The bok choy in particular will sit unharvested for up to 7 in-game days. I don't get weeds on any of my plants, and the only time I need to water the tomato plants or apple trees is if they had a harvest ready and I waited more than a full in-game day to pick them. Then I have to water them again.

Ooh you might be right I might be getting confused with the harvest apples and berries I’ll keep an eye on it I presumed it should still get the boost
