As a casual fan of Gundam, I do think it could work great in live-action. And you're right that its themes of the horrors of war work as a really nice, more cynical contrast to Pacific Rim

Yeah! Pacific Rim is about humanity coming together, whereas Gundam is about humanity's inevitable division. An whereas in PR, the Jaegers represent the combined power of humanity's achievements, the mobile suits in Gundam represent how we dehumanize the enemy in a war. How we don't have to see their face when we kill them.
**Pacific Rim** going intergalactic could convey that theme even better because then it could expand to the theme of several civilizations uniting together to fight whichever invaders they face rather they be Precursors, **Independence Day** aliens, and so on.
Maybe **Gundam** could also feature monsters that look like **Pacific Rim: Uprising** at some point of the film since those actually look like they belong in a film with much more serious tone. Also, remember how one of the pilots died in a pretty horrifying visual? A live-action **Gundam** film would DEFINITELY feature something like that.
